One of my favorite foods is Beef in Oyster Sauce. I didn't know a specific recipe and I didn't waste time searching the web, as I like to improvise, and the result was delicious. I used beef (flank or filet is best for this), red and yellow bell peppers, onions, mushrooms (canned), oyster sauce, white wine and spices (ground ginger, black and red pepper, chilli and nutmeg).
Start by preparing the ingredients. Cut the bell peppers and the onions (strips - not very thin). Cut the meat (also in strips - the size of the little finger) and drain the mushrooms.

Spice the meat with pepper, chilli, a bit of nutmeg and lots of ginger. Preheat a spoon of oil and roast the meat in it. A wok is perfect for this recipe. After 4-5 minutes add half a glass of wine. Let it simmer under a lid for about 10 minutes. Remove the lid and keep cooking until all the wine is gone and the meat is brown and roasted. Remove the meat from the pan.
Add a bit of the wine and the onions in the pan - over medium heat. I like to add a tablespoon of brown sugar for a bit of extra sweetness. After 2-3 minutes add the bell peppers. Keep stirring and let them cook for 3-4 minutes. Add the mushrooms and the rest of the spices (ginger, pepper, chilli, salt - to taste). Stir a bit and add the meat back.
Add the rest of the wine and the oyster sauce and let it simmer, stirring from time to time, for another 5 to 10 minutes (depending on how cooked you want the vegetables). Keep a lid over it if you want more sauce in the end.

100ml Oyster Sauce;
