We really like Chinese food and we try reproducing its taste in many of our recipes. For this one we used onions, green apples (Granny Smith), bell peppers (red and yellow), bamboo sprouts, ginger, soy sauce (sweet not salted), brown sugar and spices (salt, pepper, chili, ground ginger and ground cinnamon).
Start by preparing all the ingredients. cut the pork in small cubes and spice it with chili and ginger (ground). Cut the rest of the ingredients. Mince the onion; cut the apples in small pieces - cut each apple in slices (max 2cm thick) and each slice in 3-4 pieces; cut the bell peppers the same way (slice and dice); peel the ginger root and cut it into very small cubes (5mm); we used canned bamboo sprouts that comes in long slices - make sure to dice those also.

It's best to use a wok for cooking this, but any pan or pot is good (if it's big enough). Heat some oil and start frying the onions. Add some brown sugar, stir for a minute and add the ginger.
After one more minute add the apples. Let them caramelize for a few minutes and stir from time to time. Add the bamboo sprouts. Add the meat. I like it when it fries a bit on its own so I pushed the contents of the wok to a side and added the meat in the free space, stirring it with care until all the cubes got a bit roast.
You can get the same effect by frying the meat separately and adding it after, but some of the juices will be lost. Add the bell peppers and stir.
Add the spices (salt, pepper, chili, ground ginger and cinnamon). Add some water (half of glass) and let it cook on low heat, stirring often. When the water is reduced add soy sauce and let it cook for 3 to 5 more minutes while stirring. If your soy sauce is salted don't add any more salt, and be careful how much sauce you use.
After all the sauces are reduced and the ingredients start roasting again you can remove it from the fire. Serve it with wild rice by its side.
Ingredients:
600g pork tenderloin or fillet;
1 big onion;
1 or 2 green apples (we used 3 halves - depends on apple size);
1/2 red bell pepper;
1/2 yellow bell pepper;
1 small ginger root;
100g bamboo sprouts;
70ml sunflower oil;
100ml soy sauce (sweet not salted);
spices (salt, 1 teaspoon ground ginger, 1 teaspoon ground cinnamon, pepper and chili to taste).
