I found this recipe on a pack of spices and after the first sentence I knew I had to try it. If you want a refreshing, summery and very tasty recipe this Wine and Orange Marinated Pork is perfect. We used pork tenderloin, red wine, one orange and spices. We served it with a Yogurt and Orange Dip.
First of all you need to marinate the pork. One hour should be enough, but you can let it marinate even more.

Cut the tenderloin in slices - no more than 1cm thick. Spice the meat with lots of mint, thyme, pepper, salt and a bit of chili. Great the zest of an orange over the meat (just the colored part, take care not to grate the white skin underneath as it's bitter).
Slice the orange into thick rounds (5-6mm). Place the oranges and the meat in a bowl and pour the wine over. Let it marinate. If you place it in the fridge take it out half an hour before cooking it.
After it marinated enough, drain the meat and fry it in a nonstick pan. Don't add oil, just let it fry in it's own juice.
Fry it until it gets that golden-brown roast look.
Serve it with Yogurt and Orange Dip and a fresh summer salad (tomatoes, cucumbers, lettuce, scallions, etc).
